White Asparagus Crean Soup
This creamy white asparagus soup is a must-have during the Spargel season. It is so easy and quick to whip up this classical during those warm days!
Yield: 6 people
- 3-5 White Asparagus cooked
- 50 g Butter
- 50 g All-purpose flour
- 500-750 ml Spargel broth
- 50-75 g Heavy cream
- A pinch of Salt according to taste
- A pinch of Ground nutmeg powder according to taste
Cut the white asparagus into small pieces.
In a suitable pot, melt butter and add in all-purpose flour. Mix butter and flour to form a roux using a whisk. Since we want to achieve a white soup, we want a white roux.
Under constant stirring, add in a small portion of the broth into the roux. Mix the mixture until you get a smooth texture. Thereafter, add in a second portion of the broth and mix again. Continue this step until you get the ideal white asparagus soup consistency.
Once you are satisfied with the texture and consistency of the Spargel soup, pour in heavy cream and season according to taste.
Add in the white asparagus.
Serve hot!
