White Asparagus Crean Soup

This creamy white asparagus soup is a must-have during the Spargel season. It is so easy and quick to whip up this classical during those warm days!

Ingredients you need

  • 3-5 White Asparagus cooked
  • 50 g Butter
  • 50 g All-purpose flour
  • 500-750 ml Spargel broth
  • 50-75 g Heavy cream
  • A pinch of Salt according to taste
  • A pinch of Ground nutmeg powder according to taste

Directions

  • Cut the white asparagus into small pieces.
  • In a suitable pot, melt butter and add in all-purpose flour. Mix butter and flour to form a roux using a whisk. Since we want to achieve a white soup, we want a white roux.
  • Under constant stirring, add in a small portion of the broth into the roux. Mix the mixture until you get a smooth texture. Thereafter, add in a second portion of the broth and mix again. Continue this step until you get the ideal white asparagus soup consistency.
  • Once you are satisfied with the texture and consistency of the Spargel soup, pour in heavy cream and season according to taste.
  • Add in the white asparagus.
  • Serve hot!
