White asparagus cream soup (Spargelcremesuppe Rezept) – This creamy white asparagus soup is a must-have during the Spargel season. It is so easy and quick to whip up this classical during those warm days!
We have been enjoying this Spargel season. Each weekend I go to the weekly market, I will buy fresh white asparagus and a generous amount of strawberries for my family.
Sunday is our Spargel day, this means that I will cook white asparagus, which goes perfectly well with Kratzete, hollandaise sauce and ham. So, how do you get rid of leftover white asparagus? We would make a creamy pot of white asparagus soup on Monday and throw the leftover white gold into the soup. Voilà! A quick and nutritious appetizer is ready! My kids love this white asparagus soup because of its creaminess and its sweetness.
Tips on making creamy White Asparagus Soup
Spargel broth: What is white asparagus without the precious broth? Check this Spargel post to learn how to make the broth. You can store this broth up to 2 days in the refrigerator or freeze it up to several months.
Spargel: I always buy extra asparagus, so that I have enough to garnish the soup.
Heavy cream: This ingredient gives the soup its creaminess and boosts the taste of the soup.
Ground nutmeg powder: Alternatively, you can use ground pepper powder. It is my personal preference to use ground nutmeg powder. Tip: I use ground nutmeg powder for all white sauces or soups.
Basic Sauce making technique: I use this basic sauce making technique for this recipe. Simply add more liquid to your sauce, and you will get a soup consistency.
How to make creamy White Asparagus Soup
- Cut the white asparagus into small pieces.
- In a suitable pot, melt butter and add in all-purpose flour. Mix butter and flour to form a roux using a whisk. Since we want to achieve a white soup, we want a white roux
- Under constant stirring, add in a small portion of the broth into the roux. Mix the mixture until you get a smooth texture. Thereafter, add in a second portion of the broth and mix again. Continue this step until you get the ideal white asparagus soup consistency.
- Once you are satisfied with the texture and consistency of the Spargel soup, pour in heavy cream and season according to taste.
- Add in the white asparagus.
- Serve hot!

You can serve this creamy white asparagus soup with some baguette or bread. However, I usually serve my soup with Kratzete and ham. No hollandaise sauce is serve this time, since the soup is creamy enough.
How to store creamy White Asparagus Soup
Simply store the leftover white asparagus cream soup in an airtight container or in a pot with lid (which is my personal preference because I can reheat the Spargelcremesuppe in the pot directly). Thereafter, keep it in the refrigerator. Add a little Spargel broth (or water, if you do not have broth) and reheat it in a pot.

White Asparagus Crean Soup
Ingredients you need
- 3-5 White Asparagus cooked
- 50 g Butter
- 50 g All-purpose flour
- 500-750 ml Spargel broth
- 50-75 g Heavy cream
- A pinch of Salt according to taste
- A pinch of Ground nutmeg powder according to taste
