Erdbeerebäbli (Mashed strawberries yoghurt) – It is the best strawberry dessert we need for summer!

It is the season of Spargel and Erdbeeren. Almost everyone is crazy over these 2 ingredients during this season. When I first came to Germany, I never understood why Germans would queue up for at the market for white asparagus and strawberries. Now I totally understand why. So, come and celebrate this joy with me!

We love our main meal with white asparagus and strawberries for dessert. This mashed strawberries yoghurt was introduced to me by my mother-in-law. It is a traditional dessert from their hometown. You only need three ingredients and it is so easy to make. Yet it has the best flavours! It is the only dessert you need during summer. I forgot to mention that Erdbeerebäbli takes you only 10 minutes to make!

Tips on making Erdbeerebäbli

GERMAN RED CABBAGE RECIPE

Strawberries: Ripe strawberries are the best! When strawberries are at their cheapest rate, they are perfect for this recipe. Mash those red vitamins with the tip of a fork. Do not use an electric mixer because we do not want to make strawberry smoothie or purée. We want chunks of strawberries in our Erdbeerebäbli. No chunks, no Erdbeerebäbli

Yoghurt: I personally prefer to use Greek yoghurt for the recipe because of it is creamier and Plain yoghurt works as well. Three generously tablespoons of yoghurt should be enough because we only want to cream up this dessert.

Honey: I usually use honey to sweeten the mashed strawberries yoghurt for a healthier version of this dessert. Traditionally, it is sweetened using sugar. However, the sweetness of the strawberries may vary and sweeten this recipe according to your taste.

How to make Mashed Strawberries Yoghurt

GERMAN RED CABBAGE RECIPE
  1. Give those strawberries a good rinse and cut them into halves.
  2. In a mixing bowl, mashed the strawberries with the tip of a fork. There should be chunks of strawberries. 
  3. Add in yoghurt and honey into the mixing bowl. 
  4. Mix the ingredients and serve!

How to serve Erdbeerebäbli

Keep your Erdbeerebäbli in the refrigerator before serving. It tastes best when chilled.

How to store Mashed Strawberries Yoghurt

Even though we always finish this strawberry dessert within minutes (because it is that good), this mashed strawberry can be kept in the refrigerator for a day.

Erdbeerebäbli Recipe

It is the best strawberry dessert we need for every summer!

Ingredients you need

  • 500 g Fresh strawberries
  • 3 tbsp Greek yoghurt or plain yoghurt
  • 1 tbsp Honey or 2 tbsp sugar

Directions

  • Wash strawberries thoroughly and cut them into halves.
  • In a mixing bowl, mash the strawberries with the tip of a fork. There should be chunks of strawberries.
  • Add in yoghurt and honey into the mixing bowl.
  • Mix the ingredients and serve!
