German noodle salad (Nudelsalat Rezept)  – This quick and easy salad is perfect for the summer and all your BBQ parties. It requires only a minimum effort and provides a maximum flavour. The best part is that you can make this beforehand and bring it to all your gatherings!

As the weather gets warmer, I prefer to prepare cold dishes for my family. This German noodle salad is definitely one of my favourite summer dishes! It is in fact my son’s second favourite food. He wishes for it every birthday! The first place has to be German Spätzle

This noodle salad is full of flavours. In addition, it is so easy and quick to make. If you do not know what to cook. A simple German noodle salad and a good grill steak will not go wrong. This
Nudelsalat is great for all your BBQ parties. Prepare it one day ahead and amaze your loved ones at the gatherings!

This is not the only German pasta salad recipe available. Every family has their family recipe, and this recipe has been passed down from my beloved mother-in-law. The fun part of a salad is to be creative and experimenting!

  • Short-cut pasta: In Germany, you can a type of short-cut pasta called Hörnchennudeln. It looks like macaroni, but it is shorter and thicker. This is my favourite short-cut pasta to use. However, you can use other types of short-cut pasta such as macaroni for this German noodle salad recipe.

    Vegetable oil/ Salad oil: I would not recommend using oil with strong flavours, such as olive oil because it will add a distinct olive oil taste to your salad. Mild-flavoured oil would be a better choice. 

    Vegetarian version: For a vegetarian version of this German noodle salad, do not add salami and ham to your salad.

    Simply feel free to adjust and season this noodle salad recipe according to your taste.

    1. In a pot of salted water, cook your favourite short-cut pasta according to the packaging.
    2. While the pasta is cooking, cut salami, ham, Emmental cheese, pickled cucumbers and onion into tiny pieces or tiny cubes.
    3. Drain cooked pasta with a colander or a strainer and transfer pasta into a big bowl.
    4. In the bowl, add in all other ingredients and seasoning. Mix everything together with a spoon and fork.
    5. Place a cling wrap over the noodle salad or in an airtight container. Place it into the refrigerator. Serve it cold.

    This quick and easy salad is perfect for the summer and all your BBQ parties. It goes extremely well with grill steaks and sausages. Serve it cold and finish the dish with crunchy carrot salad as a side dish.

    How to store German Noodle Salad

    The salad can be stored up till 2 days in the refrigerator in an airtight container and tastes even better on the second day. If the salad dries out a little in the refrigerator, just feel free to add a little heavy cream and mix the salad again. Also, feel free to adjust the taste according to your preferences. Just prepare it beforehand. Adults and kids love this recipe!

    Ingredients you need

    • 125 g Short-cut pasta of choice such as croissant noodles (Hörnchennudeln), macaroni
    • 50 g Salami
    • 50 g Ham
    • 50 g Emmental Cheese
    • 3 Pickled cucumbers
    • 1 Onion
    • 100 g Heavy cream
    • 1 tbsp Sugar
    • 5 tbsp Ketchup
    • 1.5 tsp Salt
    • 0.5 tsp Paprika powder
    • 1 tsp Dried/ Fresh herbs e.g. Thyme, rosemary, oregano
    • 100 g Yoghurt
    • 4 tbsp Salad vinegar e.g. wine vinegar
  • While the pasta is cooking, cut salami, ham, Emmental cheese, pickled cucumbers and onion into tiny pieces or tiny cubes.
  • Drain cooked pasta with a colander or a strainer and transfer pasta into a big bowl.
  • In the bowl, add in all other ingredients and seasoning. Mix everything together with a spoon and fork.

  • Madeira Wine Sauce for Beef Tongue

    Do you want to know what is perfect? A simple beef tongue recipe with Madeira wine sauce. This savoury wine sauce compliments the mildness of the beef tongue. This is part II of our lengua recipe. Check out last week’s post/video for the beef tongue recipe.

    Ingredients you need

    • 80 g Butter
    • 80 g All-purpose flour
    • 850 ml Lengua broth
    • 3 tsp Tomato paste
    • 1 tsp Salt when necessary
    • 0.5 tsp Ground black pepper
    • 150 ml Madeira wine
    • 1 tbsp Sugar
    • 65 ml Heavy cream
  • It is important to add broth slowly into the mixture. Add one portion (e.g. 100ml) of the broth from the beef tongue recipe (see recipe from last week) and stir the mixture continuously to prevent lumps. Each time, when the broth is blended into the mixture, add in the next portion of the broth into the pot and mix until you get a smooth texture. It is essential to continue stirring the mixture and adding only small portions of broth, so that we get a smooth and not lumpy sauce.
  • Continue the process until you get an ideal consistency of your preference. Thereafter, add in all other ingredients to your pot (tomato paste, sugar, Madeira wine, salt and pepper). Adjust the amount of Madeira wine according to your preference. Bring the sauce to a boil and add in the heavy cream. Mix the sauce and turn off the heat.
  • Pour the Madeira win sauce over the lengua and serve extra sauce in a sauce boat.
