Crunchy Carrot Salad Recipe This carrot salad recipe is a must-have in your salad collection. It is simple, delicious and stays crunchy even if it is kept overnight! Anyone would easily be impressed by this salad’s perfect combination of sweetness and savouriness.

As long as I could remember, I do not remember eating salad back in South East Asia (probably once or twice in some restaurants). We do not eat salads at home. The first time I ate a proper salad was in Germany and I did not like it at all. “We don’t eat our vegetables RAW!!!was my thought back then.

As time goes by, I start to appreciate salads. They are versatile, creative and delicious. Now, I love the fact that salads can be eaten raw and served cold. This crunchy carrot salad recipe is my family’s favourite salad recipe. My toddler loves it very much and could eat a big portion of this salad (for his size).

Don’t be afraid to bring this crunchy carrot salad to your next summer barbecue party. Everyone will be impressed with this delicious salad.

Tips for making Carrot Salad Recipe

Miracle Whip: You can also use Mayonnaise, if you like to or if you do not have Miracle Whip at home. I just prefer using Miracle Whip for this recipe because it adds sweetness and creaminess to this carrot salad.

Italian Seasoning: This adds savouriness to the salad. You can try out other salad seasoning but I personally like using Italian seasoning and I think this recipe tastes best with it. 

Apple Cider Vinegar: Apple cider vinegar brings out the sweetness of the shredded carrots yet adding a hint of sourness to the salad. I have tried out this carrot salad with other vinegars and the salad tended to be more sour.

Vegetable Oil: It is important to avoid using oils of strong flavours such as olive oil in this recipe. Odourless oils such as sunflower oil do not add additional unwanted flavour to the salad, covering the flavours of the carrots.

How to make Carrot Salad Recipe

In a suitable bowl, grate carrots using a standard grater.

Add all other ingredients (Miracle Whip, Italian Seasoning, apple cider vinegar and vegetable oil) to the shredded carrots.

Add salt according to taste. However, the brand of Italian seasoning that I am using has salt in it. Therefore, I would skip this step.

Mix every ingredient together and serve. You can also chill this carrot salad in the refrigerator for at least an hour before serving. It tastes even better, when it is served cold.

How to store Carrot Salad

You can store this yummy carrot salad in the refrigerator up till two days. This salad remains crunchy even if it stored overnight. It might lose its crunchiness, if is stored more than a day, so enjoy as soon as possible.

This carrot salad recipe is so easy to make and so delicious to eat that you can whip it up within minutes. I always prepare my salad fresh and store the rest overnight. It would be gone by the next day.

Crunchy Carrot Salad Recipe

Ingredients you need

  • 3 Carrots
  • 3 tbsp Miracle Whip or Mayonnaise
  • 1 Packet Italian Seasoning
  • 2 tbsp Apple Cider Vinegar
  • 3 tbsp Vegetable Oil


  • Grate carrots using a grater in a suitable bowl.
  • Add Miracel Whip, Italian Seasoning, Vinegar and Oil to shredded carrots.
  • Mix all ingredients thoroughly.
  • Serve and enjoy! Mix every ingredient together and serve. You can also chill this carrot salad in the refrigerator for at least an hour before serving. It tastes even better, when it is served cold.
