Autumn is finally here again! Fall is definitely my favourite season! The chilly season filled with beautiful red leaves and cuddly moments. A fall without pumpkins isn’t the same with an autumn filled with delicious pumpkin recipes. A warm bowl of pumpkin soup and/or this creamy pumpkin sauce with your favourite pasta definitely makes your autumn better.
This bacon pumpkin cream sauce for pasta tastes less heavy than your usual creamy pasta sauce because it uses a larger percentage of pumpkin than cream. Pumpkin or Butternut squash provides a smooth texture to the sauce. Not only that, pumpkin is also very healthy and kids love them as well. So enjoy your pumpkin sauce as much as you could now before this orange season ends!
Tips on making Pumpkin Sauce for Pasta
Bacon and onion: Bacon and onion definitely boost the flavour of this creamy pumpkin sauce for Pasta. Bacon is optional and can be skipped in this recipe, if you prefer a vegetarian or vegan version of this sauce. If you want a meatless version of this recipe, simply replace the beef broth with vegetable broth and sour cream with coconut milk.
Mashed Pumpkin/ Pumpkin purée: Pumpkin is the main focus of this dish and probably during every autumn. I usually use Hokkaido pumpkin because they are sweet and provides the sauce with a smooth texture. They are easily available in Germany. However, you can use other pumpkins or squash of your choice for this pumpkin sauce for pasta.
Simply peel the pumpkin (the skin of Hokkaido pumpkin tend to be harder) in large chunks. Thereafter, you can either steam the pumpkin chunks or just cook them in a pot with a little water for about 30 minutes. If you cook them in a pressure cooker, it would take about 15 bis 20 minutes for them to turn soft. After which you can use a fork to mash the softened pumpkin or purée them with a mixer. Cooked pumpkin or fresh pumpkin chunks can be easily frozen for several months.
Beef Broth: Water or vegetable broth can be used in this case as well. However, I personally prefer using beef broth for most of my sauces because it adds a stronger flavour to the sauce and makes it really delicious. Beef broth will thin out mashed pumpkin to create a sauce for your favourite pasta.
Seasoning: In order to keep the taste as natural as possible, I only season the sauce with salt and pepper. Due to the addition of the bacon, sour cream and the beef broth, the creamy bacon pumpkin sauce for pasta is flavourful enough.
Sour cream: Sour cream adds a creaminess to the pumpkin pasta sauce. In addition, sour cream brings the sauce together and a nice finishing touch to this recipe.
How to make Pumpkin Sauce for Pasta
In a suitable pan or pot, melt butter over medium heat and add in fine bacon strips. Once the bacon strips turned crispy, add in chopped onions. At the same time, cook pasta according to packaging. If you are using fresh pasta, it takes only about 3 minutes to cook.
Thereafter, add mashed pumpkin or pumpkin purée into the pan. Spread some flour over the mashed pumpkin, which would thicken the sauce at the end and add beef broth to the sauce. I like to add plain flour to thicken the sauce before adding liquid to the recipe because this would reduce the chances of lumps in the sauce. Stir the sauce gently with a wooden spoon and blend everything together. In case, you use mashed pumpkin, you may find tiny pumpkin pieces in your sauce. If you prefer something smoother, then use purée.
Season the sauce with some salt and pepper. Finish up the pumpkin pasta sauce with some sour cream. Serve the creamy bacon pumpkin sauce with your favourite pasta, or simply cook pasta in the sauce! Tip: If you are cooking your pasta in the sauce directly, you may want to add in enough pasta water to thin out the sauce or reduce the amount of flour. This is because your pasta will absorb the sauce.

However, you can simply freeze the mashed pumpkin or pumpkin purée for several months. This pumpkin pasta sauce can be easily recreated within 30 minutes (when you have ready-made pumpkin purée available) and be enjoyed during the chilly autumn days.
